OVERVIEW

Nikkei, or the Japanese diaspora, refers to the emigrants from Japan and their descendants that reside outside of Japan.  There are around 2.5 million nikkei living in their adopted countries, and a principal one of these countries is Peru.  Throughout the years the Japanese and Peruvian cultures have crossed and combined, especially in regards to gastronomy.  Cotesushi is a result of this cultural dialogue and fusion.  As an artist and an anthropologist, I wanted to represent these two unique cultures in natural and non-cliche ways.  I chose the toucan bird, a beautiful specimen native to the Peruvian region and representative of the landscape and ecosystem so different from that of Japan.  The toucan food illustration was created with a blend of Japanese and Peruvian ingredients, all of which are part of Cotesushi’s menu - dynamic ingredients such as ginger root, black corn, mango, white fish, etc.  The Nikkei cover includes native Peruvian design elements of organic feel yet including complex geometrical systems, iconic and unique to the Peruvian culture.  These structures I also created with more Cotesushi ingredients, such as seaweed, salmon, wasabi, fish roe, etc.  Together the two artworks illustrate the breadth and richness of both Japanese and Peruvian culture, and the infinite possibilities that cultural cross-pollination can provide.  It was a pleasure to work with Cotesushi’s variety and fine quality of ingredients, and to be a part of a deeper cultural search and gastronomic expression.  I hope my work delights and inspires other to explore and discover new culture, new flavors, and new experiences.

Anna Keville Joyce is a Food Stylist & Creative Director originally from the USA and currently based out of Buenos Aires and New York City with a background in Anthropology, Food Styling, and Design.  She has participated in a large variety of photography and film projects in the USA, South America, and Europe.  She works as a freelance commercial Food Stylist for photography and film, as well a Food Illustrator/Artist and Creative Director.
